Banana Cupcakes

1 egg
1/4 c. margarine
1/2 c. sugar
1 large (ripe) banana mashed
2 T. sour cream
1 c. flour
1/2 t. baking soda
1/2 t. cinnamon
1/2 t. vanilla
1/2 t. banana extract
*1/4 c. nuts (optional) (walnuts chopped)

Cream butter and sugar; add egg, banana, sour cream and extract. Mix well. Stir in flour, soda and cinnamon. Fill cupcake cups 2/3 full. Bake at 375º for 20 min. Frost and top with nuts if desired. Frosting – banana or vanilla.

Banana Frosting

2 T. butter or margarine
1 medium (ripe) banana (mashed)
1/4 t. fresh lemon juice
1 1/2 c. confectioner’s sugar
1/4 t. banana extract
1/4 t. vanilla

Cream butter or margarine. Add banana, lemon juice and extracts. Stir in confectioner’s sugar slowly, beat until smooth.

Vanilla Frosting

3 c. powdered sugar
1-2 T. butter
2 T. milk
1/2 t. vanilla
1/4 t. almond extract

Mix well, until creamy.
